Mediterranean Style Chicken, Eggplant and Tomatoes
1 large eggplant
3 medium to large tomatoes
1 onion
1 chopped red or green bell pepper
3-4 tsp. oregano
1 or more tsp. basil
1/8 to 1/4 tsp. cayenne
salt to taste
1/4 to 1/2 tsp. pepper
Also garlic if you wish.
Olive oil for cooking.
1/2 cup brown rice
If you wish to add chicken, cut to bite size pieces and cook separately,
remove from pan. Add back at the end of the cooking process.
Peel and chop eggplant and tomatoes into small cubes (approx. 1/2 inch)
Add olive oil to pan and cook onion and peppers until onion is translucent.
Add eggplant, tomatoes and seasonings.
When done add chicken back to pan and salt and taste.
