Chocolate Cake with Chocolate Sauce (made with Stevia)


2 eggs, separated
3 Tablespoons unsweetened cocoa (or carob powder)
3/4 teaspoon baking soda
1/4 teaspoon Stevia powder
1/4 cup oil
3/4 cup whole wheat flour
1/2 cup milk which includes 2 Tbsp lemon juice to thicken (or use yogurt)

Beat two egg whites and set aside. In another bowl beat the remaining ingredients, then add the egg whites.

Bake in 8 x 8" square pan at 350 F degrees for 18-20 minutes.

My comments: It needs something and next time I make it I will add vanilla and maybe double the stevia. If you try it, let me know! Karen


1/8 tsp stevia
1 square unsweetened chocolate
3 Tablespoons butter or margarine
3/4 cup skim milk
1 Tablespoon cornstarch
1/2 teaspoon vanilla

In small pot over medium heat, melt chocolate and butter. Add milk, stevia, vanilla. Put cornstarch in a little dish and add some of the milk mixture and blend together until no lumps remain, then pour it back into the pot. Cook until slighly thickened.

Makes about 1 cup.

Now THIS is delicious!
